Low Carb Cauliflower Soup

Number of Servings: 10

Ingredients

    3 Tbsp butter
    3 Leeks cleaned and diced
    1head cauliflower
    3 cloves garlic
    8 cups chicken broth
    1 cup cream
    Salt and pepper to taste

Directions

Saute diced leeks, garlic and cauliflower in butter...about 15. Minutes on medium heat. Add chicken broth and season with salt and pepper. Simmer for 2 hours or more. Let cool slightly and add cream. Puree in food processor until smooth.......Voila!!!!
