Salad with smoked cheese and roasted pumpkin seeds

Introduction

Number of Servings: 4

Ingredients

    5-6 cups of shredded romaine lettuce or other green lettuce
    1 medium carrot, cut into small pieces or thin strips
    1 large tomato, cut into slices
    1 small hand full of pumpkin seeds, roasted without oil in an iron skillet
    1 small piece of smoked cheese
    2 tsp olive oil
    1 tsp sesame oil
    3-5 tsp balsamic vinegar, white
    salt
    freshly ground black pepper

Directions

mix all veggies together, throw in the cheese and the pumpkin seeds, season with salt, pepper, oils and vinegar and enjoy.

Serving Size: makes 4-5 bowls of salad.
