Introduction

Number of Servings: 8

Ingredients

    3 tbls Kikkoman Lite Soy Sauce
    2 tbls Cornstarch
    2 tsp Garlic Chili Sauce
    6 tsp minced Ginger Root
    2 tbls Sesame Oil
    1 Lime Juiced
    1 lb Pork Tenderloin, 16 oz (remove)
    2 tbls Rice Vinegar
    3 cups chopped Bok Choy
    2 cup chopped Kale
    1/2 cup chopped Scallions
    7 sliced Waterchestnuts
    bunch of Sugar Snap peas
    3 cups chopped Chinese Cabbage
    1 cup shopped shiitake mushrooms

Directions

1. In a medium bowl, combine 2 tablespoons soy sauce, 1 tablespoon cornstarch, chili sauce, ginger and water. Mix all together until smooth and stir in the pork cubes. Cover and refrigerate for at least 30 minutes.
2. In a small bowl combine the ginger, lime juice, 1 tablespoon soy sauce, vinegar, 1 tablespoon cornstarch and sesame oil. Mix together and set aside.
3. Remove pork and marinade from refrigerator. In a large skillet or wok heat oil until hot. Stir in pork with marinade, stir-fry for 3 minutes and add any hard vegetables.
4. Pour in lime mixture, reduce heat and simmer until sauce thickens, about 6 to 8 minutes.
5. Stir in any softer vegetables such as you bok choy, cabbage or kale. Cover and simmer until vegetables reach desired tenderness.
6. Remove from heat and serve over rice or Chinese noodles of any kind.


Serving Size: makes 8 1-cup servings
