Mexican Rice Casserole

Introduction

I first enjoyed this at a church pot luck, and it is a family favorite...also can be used in a tortilla for a good quesadilla! I first enjoyed this at a church pot luck, and it is a family favorite...also can be used in a tortilla for a good quesadilla!
Number of Servings: 8

Ingredients

    1 lb. ground beef
    1/2 cup diced celery
    1/2 cup chopped onion
    1/2 cup green pepper
    salt, pepper to taste
    1 cup salsa
    2/3 cup lite sour cream or mayo
    1 can chili
    1 can black beans
    2 cups cooked rice
    2 cups grated cheese

Tips

Use leftovers for a good enchilado or quesadillo!


Directions

Brown the ground beef, celery, onion and green pepper.
Rinse and drain.
Salt and pepper to taste.
Add the rest of the ingredients. Rice should be precooked.
Top with grated cheese.
Bake for 350 degrees for 35 degrees.
