Having the skillet hot is key for this recipe. Scallops should be caramel-colored.
Add butter, swirling quickly as butter melts and browns.
Place scallops in skillet. Cook for 3 minutes. Turn, swirling pan enough so that raw side of scallop can cook in melted butter. Cook another 3 minutes.
Remove from heat, allowing to rest for 3-5 minutes.
Serve with lemon wedges if desired.
