Autumn's Stuffed Peppers

6 large bell peppers
1/2 pound ground beef
1/2 pound ground turkey
1 med onion chopped
1-2 cups cooked brown rice
V8 low sodium juice
I use a large pasta pan but sometimes I have to cook in 2 batches it depends how big the peppers are. Just half the sauce and V8 for the first three then use the rest on the last three.**This is a basic recipe and spices are free to be added and things adjusted to your taste.**
Mix ground beef, ground turkey, cooked rice, and onion till combined. Stuff meat mix into peppers.
Cook in a large covered saucepan sitting in tomato sauce and the V8. Spoon boiling sauce over the tops every ten minutes or so. Serve with sauce makes 6 peppers.
Serving Size: Makes 6 suffed peppers
