Introduction

DELISH!! homemade curry with no mess no fuss! DELISH!! homemade curry with no mess no fuss!
Number of Servings: 10

Ingredients

    3 boneless pork chops cubed
    1 large onion slivered
    6 medium red potatoes halved
    2 carrots coined
    1 cup chunked pineapple with juice (1/2 can)
    2 cans coconut milk (4 cups)
    1 carton chicken broth (32 oz)
    8 TBS curry powder (1/2 cup)
    1/2 cup cooked brown rice per serving.

Tips

higher calories than i prefer. had i known that no one was going to 'make' it for dinner tonight, i would have omitted the potatoes entirely and added more carrots and added red and yellow peppers with half a head of cabbage instead. but i cooked for a crowd and this is what i am eating. it is really good.


Directions

BEWARE!! extremely complicated! JUST KIDDING. dump everything in the crock pot and cook on high setting until meat is tender. about 5 hours. serve over 1/2 cup brown rice. YUMM

Serving Size: curry makes 10-1 cup servings . with rice serving sizes are 1.5 ciups
