This is a cold salad to be made a day or 2 before serving. This is a cold salad to be made a day or 2 before serving.Ingredients

2 C frozen peas
2 C frozen corn
2 C chopped celery
4 C chopped bell pepper
1 - 2 C chopped onion
mix all together pour on the following vinaigrette
3/4 C Olive Oil
1/2 C vinegar
1/2 C sugar
Mix together and refrigerate. The next morning stir again. Stir again before serving. Excess liquid can be removed.
Tips
mixed yellow & white makes the best salad
1 large pepper equals about a cup
1 large red onion equals about a cup
each type of vinegar (apple cidar or white or balsalmic etc) lends its own texture and flavor to the salad use which you like best
I put the vinaigrette in a bottle & shake it up then pour it on...you could heat it to melt the sugar if you wish.
Saving the liquid off the salad is good for a vinaigrette for a lettuce salad or a dip for something.
