Tyler's Semi Stir Fry

Introduction

A semi-mock stir fry that even a college student (me) could cook without screwing up. It's healthy, it's tasty, and it's easy! A semi-mock stir fry that even a college student (me) could cook without screwing up. It's healthy, it's tasty, and it's easy!
Number of Servings: 2

Ingredients

    1 large cucumber, cubed
    1 medium onion, chopped
    1 large carrot, chopped
    2 chicken breasts, cubed
    c. 5 tbsp light soy sauce
    c. 1 tbsp olive oil
    c. 1 tsp mince garlic

Tips

GREAT over rice. Use leftover sauce in the pan as a topped for your dish.


Directions

Cut vegetables and put into warm skillet with olive oil and minced garlic. Let cook over medium flame and start prepping chicken. Let vegetables cook 5-7 minutes or until carrots have softened. Add chicken breast and soy sauce. Cook until most of the soy sauce has been absorbed into the veggies and chicken. Serve!
