Almond Banana Squares

Almond Banana Squares

Introduction

Ground almonds, no flour Ground almonds, no flour

Ingredients

    9 oz sliced almonds
    1/2 tsp baking powder
    4 large egg whites
    1 tbsp melted butter or margarine
    1/3 cup sugar
    1 tsp ground cinnamon
    3 small bananas - chopped
    dash of salt
    2 tbsp unsweetened cocoa powder

Directions

Preheat oven to 300
Line 8x8 glass baking dish with parchment paper

Grind almonds in food processor, pulse 5-6 times until uniform, taking care not to over-grind into butter

Add almonds and all other ingredients except the cocoa powder into a mixing bowl and mix on medium with a hand mixer for 3 minutes.

In a small bowl, add cocoa powder and 1/2 cup of the banana mixture and until cocoa is combined.

In the parchment lined baking dish, pour in half of the banana mix, then spoon the chocolate mix into 9 spots spaced evenly apart (so you end up with a drop of chocolate in each square after cutting)

Spoon the remaining banana mixture over the top to cover chocolate.

Bake 35-40 minutes until a toothpick inserted in center comes out clean
