Easy Chili (made w/ground turkey)Submitted by: MAINEROCKS
2 packages of ground turkey, 93% lean (pkg. is about 1.3 lbs. each)
1 28 oz. can of diced tomotoes
1 15 oz. can of tomato sauce (better to use reduced sodium)
2 15.5 oz. cans of kidney beans (light or dark)
1 large onion
4 tablespoons chili powder
oregano, basil, and pepper to taste
(I sometimes also add corn)
Cook the turkey meat & diced onion in a large electric skillet under meat is no longer pink, drain any fat.
Add remaining ingredients, reduce heat to low, and simmer at least an hour.
Makes 10 cups. 2 cups makes a good size dinner for me.
