Introduction

Ingredients

    * *Clementine, 3 large
    * *Grapefruit, 1 large red
    * Cucumber, 1 English
    * Radishes, 7 large
    * Lime Juice, 1 lime
    * Greek Yogurt, Plain, 2 oz
    * Light Mayonnaise, 2 Tbsp,
    * *Honey, 1.5 tbsp
    * Pepper, black, 1 tsp
    * Salt, 1 tsp
    * Romaine Lettuce 4 cup, chopped
    * Raspberries, 1 cup
    * Pistachio Nuts, .25 cup
    * Cilantro, raw, 6 tbsp

Directions

1. Peel & section clementines & grapefruit, reserving juice - add sections to juice. Add cucumber and radishes to citrus mixture & toss gently. Cover and chill 30 minutes.

2. While chilling citrus mixture, combine the lime rind and next 6 ingredients (through salt) in a small bowl, mixing until smooth.

3. Arrange lettuce in a large bowl. Using a slotted spoon place the orange mixture over lettuce. Drizzle with yogurt mixture. Sprinkle with raspberries, pistachios and cilantro.

Serving size about 1 2/3 cups salad topped with about 1 tbsp. dressing.
