High protein flax/almond waffles

Ingredients

    1/3 c flaxseed, ground
    5 egg whites
    5 whole eggs
    1 tsp Baking powder
    1 tsp cinnamon
    2 c cottage cheese
    1 T oil (coconut)
    2 scoops plant-based protein powder
    2 scoops whey protein powder, unflavoured

Tips

I make this big batch and freeze waffles for easy meals. These waffles can also be used instead of break for gluten free meals, if you use gluten free baking powder.


Directions

Grind flaxseed into meal in blender. Add and blend all ingredients and pour batter on to a waffle iron. May need to add water to keep it a good batter consistency, as flax swells. Can be topped with berries or your topping of choice. Makes about 19 waffles
