12 oz or 340 grams Ground Chicken - PC Blue Menu
1/2 cups dry Quinoa, rinsed and drained
1 medium Apple, grated
1 medium Onion, finely chopped
1 clove Garlic, minced
1/4 cup Scallions, chopped
2 Tbsp Sage, finely chopped
1 tsp Worcestershire Sauce
1 tsp Salt
1/2 tsp Pepper
1/4 tsp Allspice
1/4 tsp Ground Cloves
MAKE-AHEAD: Meat loaf can be prepared up to 1 day ahead, and then baked.
MUFFIN VARIATION: Place mixture in 12 muffin tins and bake for about 30 minutes or until meat thermometer registers 160F when insrted
2. In frying pan over medium heat, toast quinoa for 5 minutes or until fragrant and beginning to pop. In small saucepan, bring 1 cup water and pinch of salt to boil. Add toasted quinoa; cover and simmer over medium heat for 15 to 20 minutes or until water is absorbed. Set aside.
3. In large bowl, mix together chicken, apple, onion, garlic, scallion, sage, Worcestershire sauce, salt, pepper, allspice and cloves. Add quinoa and mix thoroughly. Pack mixture into 8 x 4 inch loaf pan. Bake for 1 hour or until meat thermometer registers 160F when inserted in centre of meat loaf.
Serving Size: Makes 6 servings - dived loaf equally
