"Leftover" Stirfry

Ingredients

    2 3oz chicken breasts
    1 green pepper
    1 cup sliced wild mushrooms
    1/2 cup chooped baby carrots
    2 scallions (chopped)
    1/2 cup snow peas
    2 tbsp fat free chicken stock
    1/4 cup soy sauce substitute
    2 tsp brown sugar (unpacked)
    juice of half lime
    1/4 tsp garlic powder
    1/8 tsp ground ginger

Directions

These are just veggies I had on hand. Feel free to sub out any you have on hand

Dice up the chicken into small cubes. Slice up the rest of the veggies. Add the fat free chicken stock to the wok. Add chicken. Cook until most of the pink is gone. Add carrots, pepper, and mushrooms. Continue cooking until veggies are almost fully cooked. Add snow peas and scallions. Cook for another two minutes, then add soy sauce substitute, sugar, lime juice garlic powder and ginger. Serve.
