Low Carb Meatloaf

Introduction

I'm on a low carb Atkins style diet, and this was one of the few recipes that was low carb, but completely satisfying. I'm on a low carb Atkins style diet, and this was one of the few recipes that was low carb, but completely satisfying.
Number of Servings: 5

Ingredients

    1 lb ground beef
    1/2 pound ground sausage
    2 tbsp onion, diced
    1 stalk celery, diced
    2 button mushrooms, diced
    1/3 cup tomato sauce
    1/2 cup pork rinds, crushed
    1 egg, lightly beaten
    1/2 cup Cheddar cheese
    1/2 cup grated Parmesan (use the cheap stuff)
    Spices to taste (I use onion and garlic powders, black pepper, and Italian seasoning)

Tips

I do not add salt to my meatloaf--the Parmesan and sausage are salty enough as it is. There was quite a bit of grease left in the dish, but the meatloaf itself was not oily.


Directions

Mix all ingredients, except cheddar cheese, by hand (being mindful that overworking the ingredients will make the loaf more dense). Bake for 60 minutes at 350 degrees, adding the cheddar cheese to the top of the loaf in the last 5 minutes of cooking.

Serving Size: Makes 5 1.25 inch wide slices
