Orzo & Spinach with a Kiss of LemonSubmitted by: BELASARIA
IntroductionA great way to liven up spinach! A great way to liven up spinach!
1/4 tsp salt
1/3 cup uncooked Orzo
1 9 oz package Frozen Spinach, no sauce
1/2 TBS butter
zest of 1 lemon
0.25 oz freshly grated Parmesan cheese
I used the Parmesan as my "salt" to finish the dish but you can add more once served.
For a more citrus punch, add the juice of 1 lemon.
When pasta is done, remove from pot to drain. Add butter to pot and melt.The residual heat from the pot should melt the butter. Add orzo back to pot, stirring to coat. Add spinach, lemon zest and cheese, mixing thoroughly.
Serving Size: Makes 2 servings
