Simply Roasted Red Beet SaladSubmitted by: BELASARIA
IntroductionRoasting beets brings out their natural sweetness and also is an easy way to peel them! Roasting beets brings out their natural sweetness and also is an easy way to peel them!
3 medium beets, fresh and unpeeled
1/2 TBS olive oil
1/4 tsp ground black pepper
1/4 tsp kosher salt
1/2 TBS Balsamic vinegar
This is a great "base" recipe for any roasted beet dish. Add thinly sliced red onion for a simple salad.
Remove stems and leaves from beets, leaving about an inch. Rinse and pat dry. Place beets on a large piece of aluminum foil, big enough to create a packet for the beets.
Season with olive oil, salt and pepper. Seal up foil edges.
Roast for 60 minutes or until tender to the touch.
Remove from oven carefully. Place roasted beets in cold water for 15 minutes or until cool enough to handle. Wearing plastic or latex gloves, rub the skins off the beets.
Once beets are peeled, slice. Sprinkle with balsamic vinegar. Serve warm or chilled.
