Baked Salmon Patties

Number of Servings: 12

Ingredients

    4 tins salmon with juice (can use Tuna also for tuna patties)
    4 eggs
    1 large onilon
    1 clove garlic
    1/2 cup bread crumbs (or 1/2 cup quinoa flakes for gluten free)
    1/2 tsp salt
    1/4 tsp black pepper

Tips

I some times add fresh dill to the mix, or you can add roasted peppers, raw red chopped peppers, or green peppers into the mix just to shake it up a bit for a different flavour


Directions

Pre heat oven to 350*f
In food processor, add onion and chop.
Add the eggs and blend till smooth.
Add the salmon (or tuna), salt and pepper and blend
Add the bread crumbs (or quinoa flakes) and with 3-4 quick pulses mix.
On a foil lined cookie sheet, spray with Pam and with wet hands, form patties (like a burger) and place on cookie sheet.
Put in pre heated oven (350*f) and bake for 15 mins, then flip them and continue baking for another 15 mins.



Serving Size: makes 12 4 oz patties
