Ingredients

    23 oz lean beef roast
    1 cup green beans
    1/2 cup peas
    2 cups zucchini- shredded or diced
    1/4 cup shredded carrots
    1 cup green peppers
    2 cups tomato juice
    1 cups tomatoes
    1/2 cup onion
    1 cup broccoli
    2 cups beef broth

Directions

cook beef in slow cooker until very tender. cool. discard fat and reserve only lean beef. cool broth and separate fat to gain 2 cups lean broth. combine in stock pot all ingredients. season to taste. I use beef seasoning, lawreys salt, garlic salt and generous amount of pepper. simmer until cook through about 2 hours. recipe nutrition value based on 1 cup servings.
