Ann's Potato Salad

Introduction

I make a smaller potato salad, so I am not stuck eating it forever! I make a smaller potato salad, so I am not stuck eating it forever!
Number of Servings: 4

Ingredients

    Red Potato, 2 medium
    Celery, raw, 1 stalk, small (5" long)
    *Radish, Fresh, 2
    Scallions, raw, 1 medium (4-1/8" long)
    *Horseradish, 1/2 tsp
    Yellow Mustard, 1 tsp
    *Hellman's Real Mayonnaise, 4 tbsp.
    Hard Boiled Egg, 2 large
    Salt, 1 dash
    *Peppers, sweet, red, fresh, 2 tbsp. diced
    Pepper, black, 1/2 tsp.

Directions

Boil eggs cool
Boil whole red potatoes
Cool in fridge for several hours
Peel eggs & potato
Chop eggs & potato, place in medium bowl
Chop radishes, scallions, celery & sweet red pepper
Combine horseradish, mustard and mayonaise, salt & pepper. Gently fold this mixture in with the chopped eggs and potato

Serving Size: makes 4 1 - cup serving
