Brown Rice Pilaf

Introduction

This is a yummy way to eat brown rice, it goes with everything and it's very healthy. This is a yummy way to eat brown rice, it goes with everything and it's very healthy.
Number of Servings: 1

Ingredients

    1 cup Brown Rice
    1/2 tsp Saffron or less
    1 medium Brown Onion
    1 tbsp Extra Virgin Olive Oil
    2 cups good quality Chicken Stock

Directions

Makes 4 serves of 1/2 cup cooked rice.

Soak the saffron in 1 tablespoon of hot water while you prepare the onion.

Dice the onion and saute in the extra virgin olive oil until soft.

I then put all ingredients - rice, onion, saffron, stock - into my rice cooker and turn it on. Or you could cook it on the stove top using the absorbtion method.
