1 lb. pork or chicken fajita meat
Pam cooking spray
1 medium onion, chopped
Minced garlic, 2 tsp.
2 tsp. cumin
1 can black beans, drained and washed
1 can rotel
6 oz. velveeta (light)
1 pkg. cornbread mix (without sugar preferred)
1/3 cup skim milk
Spray an 8x8 baking dish with Pam. Pour in meat mixture and spread evenly. Mix cornbread pkg., egg, and milk together and stir just until mixed. Cut velveeta into small cubes and spread evenly over meat mixture. Then pour cornbread mixture over the top being careful to cover the contents well.
Bake 20-25 minutes until cornbread is golden brown. Let dish set for 5 minutes before cutting to serve.
Serving Size: 3x3 square - serves 8
