Chicken and Quinoa with FetaSubmitted by: DARUMA
1 cup uncooked quinoa
2 skinless boneless chicken breasts (about 1 lb)
2 packets Trader Joe's low sodium chicken broth concentrate
1 large red bell pepper
1 large onion
8 oz mushrooms, sliced
8 oz Trader Joes reduced fat feta
The nutrition info is for all of the feta even though half is served at the table for people to add more feta if they so desire.
Cook the quinoa. Place in casserole pan
Sear the chicken breasts and add chicken concentrate and a cup of water. Cover and cook 10 minutes.
Transfer chicken on top of quinoa. reserve broth
Saute the onions and rosemary, then add carrots and mushrooms.
When carrots still have a bit of bite, add the red pepper, stir and pile onto the quinoa.
Crumble half the feta on top.
Pour the broth over the concoction, cover and either microwave at 50% for 20 minutes or bake in 350 oven
for 45 minutes.
Serve with remaining feta
