Quinoa "Mac and Cheese"

Introduction

Good gluten free alternative to Mac and Cheese Good gluten free alternative to Mac and Cheese
Number of Servings: 8

Ingredients

    Whole Grain Quinoa 1.5 cup
    Egg, fresh, 2 large
    Soy Milk, 1 cup
    Cheddar Cheese, 2 cups, shredded (sharp if for adults)
    Green onions, raw, .25 cup, chopped
    Garlic, 2 clove chopped

Tips

Can top with bread crumbs if there are no gluten issues and melted cheese if there is.


Directions

Cook Quinoa as directed on package. Mix eggs, milk and garlic. I also add Penzy "Forward" spice to taste to the milk egg mixture. When quinoa is cooked, add it and cheese to the bowl. Keep a 1/2 cup cheese out to melt over top. cook at 350 for 30 min.
