Turkey Basil Spring Roll

Ingredients

Filling:
1 lb extra lean ground turkey
1/2 C garlic
1 tbsp minced ginger root
1/4 C thinly sliced onion
1 tbsp curry powder (spiciness to taste)
1 tsp ginger powder
1 tbsp fish sauce
2 tbsp less sodium soy sauce
1 tbsp dried basil
1 tbsp chili powder or flakes
2 tbsp unseasoned rice vinegar
3 small carrots, grated
10 leaves fresh basil, roughly chopped
Wrapper:
8 sheets 22cm dia rice paper
1 tsp white sugar
Tips
The sugar in the water bath helps the rice paper crisp up nicely when fried. This is not required if you're not frying the spring rolls.
Directions
Brown turkey in frying pan. Drain any grease. Add garlic, ginger root and onion. Continue cooking until onion is clear. Add remaining filling ingredients except carrots and fresh basil. Mix well. Allow to cool.
(now is a good time to make a dipping sauce - yum!)
Once filling is cool eonugh to handle, mix in grated carrot and roughly chopped fresh basil.
Fill a deep 12"+ plate with water and add sugar. Mix. Dip one rice paper sheet in sugar-water mixture. Allow sit submerged in mixture for 5 seconds (important: if it sits for too long, rice paper will fall apart when you try to remove it!).
Remove rice paper from mixture and sit on flat work surface for 30 seconds. Spoon ~1/8 of filling mixture onto paper. Fold in sides, roll up from bottom.
Repeat for remaining rice paper sheets and filling mixture.
Can be fried for crispy outer shell, eaten as is or oven baked.
