1 tsp vanilla extract
2 C applesauce, unsweetened
1 banana, mashed
6 packets Sweetleaf Stevia (or 1/2 C raw honey)
5 C old fashioned rolled oats
1/4 C flaxseed meal
1 Tbsp ground cinnamon
3 tsp baking powder
1 tsp salt
2 C milk, (1 %)
Optional toppings: raisins, walnuts, chocolate chips, etc
*Adjust Stevia and/or honey to your taste preference. (I taste the batter to make sure it's sweet enough!)
*If you can only find flaxseed, grind it in a coffee grinder to make flaxseed "meal".
*I also add coconut to the batter sometimes. YUM!
*Recipe calculations are without toppings.
Mix eggs, vanilla, applesauce, banana, and stevia together in a bowl.
Add in flax, cinnamon, baking powder, salt, and oats and mix well.
Pour in milk and combine.
Spray two 12 C muffin tins with cooking spray. (If you use cupcake liners, spray those as well.)
Scoop mixture into muffin cups evenly, almost to the top.
If using toppings, add them before baking. If using fresh fruit, drop it right into the batter.
Bake 30 minutes or until a toothpick comes out clean.
May freeze in gallon freezer bags.
