Fresh and Fruity Chicken Salad

Introduction

Ingredients

    1 lb Chicken Breast, shredded or cubed
    1/2 Granny Smith Apple, cubed
    1/2 Red Bell Pepper, chopped
    1/2 cup Cabbage, fresh and shredded
    1 cup Cherries, fresh
    6 oz 0% Greek Yogurt, plain flavor
    1/8 tspn Cayenne Pepper, ground
    Salt and Pepper to taste

Tips

Chicken may be substituted with tuna fish. Celery, green/yellow/orange peppers may be added for extra color and crunch. Craisins may be added for additional tang.


Directions

Place chicken, apples, red peppers, cabbage and cherries into a large bowl. Squeeze the juice of 1 lime over the mixture. Blend ingredients. Spoon yogurt into mixture and combine all ingredients. Add Cayenne pepper, salt and pepper to taste. Mix all ingredients. Spoon into sandwich thins and serve.
