Ingredients

1 chicken breast
Salt & pepper
2 TBS unsweetened flaked coconut
3 TBS panko bread crumbs
1 egg, beaten
Tips
Pounding the chicken ensures even cooking.
Directions
Preheat oven to 350F. Spray broiler pan with nonstick cooking spray.
Mix coconut and panko on a large plate.
Place the chicken breast between sheet of plastic wrap. Pound until even and 1/4 inch thick. Season lightly with salt and pepper. Dip in egg mixture, shaking off excess.
Press chicken into coconut-panko mixture, coating both sides (this is not a thick coating). Let rest on wire rack or plate for 5 minutes so coating can adhere to chicken.
Place on broiler pan and bake for 15 minutes or until chicken is done. For extra browning, place chicken under broiler.
