Ingredients

1 tsp olive oil
2 tbsp shallots, finely chopped
1 clove garlic, minced
1/2c Vita Coco Coconut water
1 pat of butter
Tips
The butter acts as a thickener and binds the sauce, but can be eliminated.
For extra coconut flavor, add 1 tsp shredded, unsweetened coconut after the water is added.
Directions
In a medium non-stick skillet, heat olive oil over medium heat. Add shallots and saute for 1 minute. Add garlic and saute until shallots are translucent and garlic is fragrant. Do not brown shallots or garlic.
Add coconut water and increase heat to medium-high. Bring to a boil and simmer until liquid is reduced by half. Remove from heat and swirl in pat of butter.
Serve.
