Chicken & Corn Soup

Ingredients

    1 T Olive oil
    1 sliced leek
    500g chicken breast, no skin
    3 cups chicken stock
    1 can creamed corn

Directions

Poach chicken breasts or use precooked chicken.

Heat oil in a large saucepan. Add chopped leek and fry off until translucent. Add stock and bring to boil. Add chopped chicken and creamed corn. Gently simmer for 20 mins.

EAT!
