Tori's Easy Breakfast Quiche Muffins

Number of Servings: 12

Ingredients

    200g mixed diced or shredded peppers
    100g diced onions
    12 tbsp shredded cheese
    3 cups egg beaters
    bay seasoning
    salt
    pepper

Directions

Spray non stick pan with pam or other oil spray. Saute onions and peppers until soft. Add Bay seasoning and mix. Spoon mixture into 12 muffin cups in roughly equal portions. Add 1 tbsp of shredded cheese to each muffin cup. Add 1/4 cup egg substitute to each muffin cup. Sprinkle with salt and pepper to taste. Bake in oven at 350 for 30 mins.
