Macaroni & Cheese

Ingredients

    2 cups (8 oz) uncooked Barilla Plus elbow macaroni
    1/2 cup all purpose flour
    1 1/2 cups skim milk
    1 1/2 cups (16 oz) fat free sour cream
    1/2 tsp pepper (optional)
    1 bar (10 oz) mild cheddar cheese, grated

Directions

PREHEAT OVEN TO 350
Cook macaroni in boiling, salted water according
to package directions (use shortest cooking time).
Drain and rinse with cold water. Pour into a 3 QT
casserole. In a saucepan, mix flour and milk by
slowly adding milk and making a paste first. Then
bring to a boil. Slowly add sour cream and pepper.
Cook over low heat, stirring constantly,
until sauce bubbles and thickens. Reserve 1 cup
grated cheese for the top of the casserole. Toss
macaroni with remaining cheese. Pour sauce over
macaroni and mix thoroughly. Sprinkle with
reserved cheese. Bake for 1 hour or until bubbly
and brown. Serves 5.
