Eggplant bean Protein Bake

Ingredients

    Take one eggplant, peel and slice into 1/2" rounds. Spray each slice with Pam on each side and arrange on a cookie sheet. Sprinkle each slice with dried basil and organo and garlic powder. Bake at 375 for 20 minutes then flip and bake for 15 more minutes. Egplant should be browned. In a large skillet, cook onions and peppers then add the morningstar farms crumbles (regular or sausage). Drain can of kidney beans. Lay baked slices on eggplant into a round deep pie dish. Put 1/2 of the crumbles mixture on top and spread a layer of sauce, then add a layer of kidney beans. Over this, layer some more sauce and a sprinkling of cheese. Put the rest of the crumbles on top, cover with sauce and the rest of the cheese. Bake in the 375 oven for 25-30 minutes until hot and bubbly. Let sit for 5 mintues and serve. Great with a green salad!
