1/4 cup canola oil
1/2 cup milk (2% milk was used in nutritional info)
1 1/2 cup all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
1 cup blueberries
In a large bowl, beat egg. Wisk in oil and milk.
Once combined, add in rest of ingredients just until moistened (do not over-mix). Fold in blueberries.
Spray or line muffin tins and pour mixture into muffin tins.
Bake for 20-25 minutes, enjoy :)
Serving Size: Makes 12 muffins
