Primal Blueberry Claflouti

Introduction

Number of Servings: 6

Ingredients

    1 tbsp unsalted butter

    1 pint of fresh blueberries

    2 tbsp coconut flour
    1/2 tsp sea salt
    1/2 tsp baking powder

    3 eggs
    1/2c unsweetened coconut milk (i prefer 'so delicious)
    1tsp vanilla extract

    1/4 c coconut oil
    1/4 c honey

Tips

this would taste delicious with a little whipped cream as a dessert. It's also a great paleo breakfast if you're sick of eggs.


Directions

preheat the oven to 325 degrees.

grease a 9 inch pie pan with the butter

wash and drain the blueberries

in a small bowl, mix the coconut flour, sea salt and baking powder.

in another bowl, beat the eggs, coconut milk and vanilla together

add the wet ingredients to the dry ingredients, making sure there are no lumps.

on the stove, on LOW heat, gently warm the coconut oil and honey together until the mixture is liquid. do not let this boil. the mixture should be safe to touch with your finger.

while stirring the batter, slowly pour the oil and honey in a thin stream. (if it's too hot the eggs will curdle)

pour the blueberries into the pie pan and spread the batter on top

cook for 25-35 minutes in the oven or until a toothpick comes out clean.

allow to cool for 10 minutes before serving.
