Paleo Elk Stew

Introduction

Number of Servings: 4

Ingredients

    4 slices of uncured bacon
    16oz ground elk

    1tbsp chili powder
    3 cloves of garlic

    1 c chopped onion
    1 c chopped celery
    1 c chopped carrots

    40oz canned diced tomatoes and green chiles

    1c. shredded taco cheese



Directions

pan fry the bacon in a non stick skillet. Remove the bacon and set aside, keeping the grease.

brown the elk in small batches within the bacon grease. (it's very lean so the bacon keeps it from drying out) Add garlic and chili powder.
Reserve the drippings and set aside.

Using the drippings, saute the onion, celery and carrot until just tender, 5-7 minutes.

Add the canned tomatoes and chili, along with the browned beef and bring to a boil, before allowing to simmer for 40 minutes.

Serve in bowls with 1/4c cheese, some greek yogurt or sour cream, and guacamole if you prefer.
