1/3 cup tapioca pearls (I used multi-coloured)
2 x 400g (0.85pint) cans lite coconut milk
1/4 cup palm sugar
1/2 cup raisins
1/3 cup coconut, shredded and toasted
In a basin mix the eggs, palm sugar and remaining coconut milk
After the soaking time, add the egg mixture to the tapioca and place saucepan on a medium heat
Bring to just under boiling point, stirring, and continue stirring at a simmer until the tapioca becomes opaque, and the custard is thickened. This can take about 20 min.
Stir in 3/4 shredded coconut
Remove pan from heat and turn mixture into a serving dish at once. If it is left in the pan the egg will continue to cook and become curdled.
Sprinkle the remaining coconut over the top
Serving Size: Serves 6
