Baked Oatmeal with Protein

Introduction

I travel allot and like to take these with me to avoid the "free breakfast" at the hotels I stay at.

Original recipe is on the Sugar Free Mom website/blog. I added the protein and left out the flax seed.

Number of Servings: 12

Ingredients

    1 large egg
    1 C unsweetened applesauce
    1 tsp Vanilla Extract
    1 medium banana, mashed
    1 tbsp Stevia or other artificial sweetner
    2 1/2 C. Olad Fashioned Oatmeal
    1/2 tsp salt
    1 1/2 C Skim Milk
    (2) Packets Tight Curves Chocolate Protein (or other protein of your choice)
    1 1/2 tsp. Baking Powder
    1 tsp Cinnamon
    1/3 c. chopped pecans

Directions

Mix all ingredients in a large bowl. You can add the pecans right into the mix or I like to sprinkle them on top.

Bake in 12 muffin cups at 350 degrees for 30 minutes.

Freezes well.

Serving Size: 12 regular sized muffins
