Number of Servings: 25

Ingredients

    Egg, fresh, 2 small (remove)
    Vanilla extract, imitation, alcohol, 1 tsp (remove)
    Applesauce, unsweetened, 2 cup (remove)
    Banana, fresh, 1 large (8" to 8-7/8" long) (remove)
    Honey, .5 cup (remove)
    Instant, Quick, and Regular Oats Cereal, 5 cup, dry, yields (remove)
    Flaxseed, .25 cup (remove)
    Cinnamon, ground, 1 tbsp (remove)
    Baking Powder, 3 tsp (remove)
    Salt, 1 tsp (remove)
    *Silk Pure Almond Milk - Unsweetened Vanilla Almond Milk, 2.75 cup (remove)
    Toppings as desired

Tips

Made 25 muffins (not 18 as predicted)! Nutrition info is for 25 1/4 c batter muffins.


Directions

Preheat oven to 350 degrees.
Mix eggs, vanilla, applesauce, banana and Stevia together in a bowl.
Add in oats, flax, cinnamon, baking powder, salt and mix well with wet ingredients.
Finally pour in milk and combine.
Spray a 12 and 6 capacity muffin tin with cooking spray or use cupcake liners.
Pour mixture evenly into muffin tin cups.
If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.
Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them in gallon freezer bags.


Serving Size: Makes 18 1/4 cup muffins
