Carrot Soup (1 c = 1 serving)

Number of Servings: 6

Ingredients

    1 small onion
    1 tsp curry
    .3 tsp ginger
    .5 tsp thyme
    2 pats of butter
    1 small potato
    1.5 pounds of carrots
    4 c chicken stock
    .5 c applesauce
    (salt, pepper to taste)
    (garnish of toasted almond slices)

Directions

Saute onions in butter, then lightly fry spices in the butter too.
Add thyme, potatoes, broth, applesauce. Bring to boil. Add the carrots. Cook for 30 min.
Puree.
Garnish each bowl with 1 T of toasted sliced almonds (add those calories yourself! OK?)
Makes 6.5 1-cup servings.
