Savory breakfast casserole

Introduction

Italian, reduced-fat variant on a recipe by Gourmet ("Cowboy Christmas Breakfast") Italian, reduced-fat variant on a recipe by Gourmet ("Cowboy Christmas Breakfast")
Number of Servings: 8

Ingredients

    1/2 loaf of French or Italian bread, cut into 1" slices
    2 Tbsp butter
    1 garlic clove
    5 eggs
    Entire container of egg beaters (7 eggs' worth)
    8 oz Italian sausage
    2 oz shredded asiago cheese
    1/4 tsp salt
    1/2 tsp pepper
    1/2 c milk
    4 green onions, minced

Directions

Combine butter & minced garlic clove in mini food processor. Smear garlic butter on slices of bread, squish in 9" square pan. Cook sausage, drain, sprinkle on top. Mix: eggs, egg beaters, butter, green onions, salt & pepper, 1/2 of shredded cheese. Pour onto casserole, holding bread down to absorb liquid.
Bake, covered with foil, at 375 for 30 min. Remove foil, bake 20 extra minutes, then remove & let stand 10 minutes.

Serving Size: Makes 8 wedges
