Beef and Sweet Potato Stew

Ingredients

1 1/2 pounds lean stew beef
3 T flour
1/4 t salt
1/4 t pepper
1 T dried onion flakes (or 1/2 onion, diced)
1/2 T olive oil
2 large sweet potatoes, cubed
14.5 oz vegetable broth (one carton)
1/2 t cinnamon
(1/2 to 1 cup frozen peas or green beans, optional. This is not included in the nutritional info.)
Tips
My sweet potatoes ended up completely mashing, but I really prefer it that way. It was a creamy consistency and so yummy. This is not a "pretty" food, so don't make it the first time for company. :) But the flavor is incredible.
Directions
Trim excess fat and cube beef. Toss stew beef with the flour and 1/4 teaspoon each salt and pepper.
Heat olive oil in a large skillet; brown beef and onion.
Place sweet potato cubes in the Crock Pot (or dutch oven); add beef and onions.
Mix beef broth with cinnamon and pour over beef mixture.
Cover and cook on low 8 to 10 hours (crock pot) or 2 to 3 hours (stove top).
Add peas or green beans during the last 15 to 20 minutes (optional).
