Carrot Bran Muffins

Introduction

Number of Servings: 12

Ingredients

    1 1/2 c. All-Bran cereal
    1 1/2 c. buttermilk
    1/4 c. honey
    1 egg
    2 T olive oil
    1 1/2 c. carrot pulp
    1/4 c. carrot juice (fresh squeezed)
    1 c. Graham flour
    2 t. baking soda
    1/2 t. baking powder
    3/4 c. chopped walnuts
    1 t. cinnamon

Directions

1) Run fresh carrots through juicer, reserving pulp and juice.
2) Mix All-Bran, buttermilk, honey, egg, carrot juice, carrot pulp, and oil together and let soak.
3) Mix together flour, baking powder, baking soda, cinnamon, and walnuts. Add to All-Bran mixture.
4) Spoon into muffin cups. Bake at 400 degrees for 20 minutes.

Serving Size: Makes 12 muffins.
