Introduction

Whether serving it with Tortilla Chips, in Tacos, or in a Salad it makes a great filling, low fat, and high protein meal or snack. Whether serving it with Tortilla Chips, in Tacos, or in a Salad it makes a great filling, low fat, and high protein meal or snack.
Number of Servings: 8

Ingredients

    2- 10 oz cans of canned chicken in water
    (can be substituted for 10 oz of fresh cooked chicken, which then you can skip the sauteing step)

    1 can of red kidney beans

    1 can of whole corn

    1/2 cup of salsa

    1 tsp. chili powder

    (lower sodium varieties of all canned ingredients are recommended, though this recipe's nutrition facts take account for the regular sodium levels)

Directions

1. Drain all canned ingredients

2. put chicken in a skillet pan with cooking spray, add the salsa and chili powder, saute until chicken is dryer and slightly seared (this gets rid of the canned chicken's "canned" consistency and makes it more like fresh cooked chicken, if you are using fresh cooked chicken you can skip sauteing)

3. in bowl add chicken, drained corn, and beans and mix (if using fresh cooked chicken you will have to cut it up and maybe pull it a little.)

4. Eat with tortilla chips, in Tacos, or in salads.

Serving Size: makes 8 1/2 cup servings
