1 c dry quinoa
2 c fresh spinach
2 tsp garlic, minced
1/2 Tb butter
1/2 Tb extra virgin olive oil
1/2 tsp salt
1/4 tsp pepper
2 Tb grated Romano cheese
1/3 c part-skim shredded mozzarella cheese
2. In the same pan, melt butter with olive oil. Add garlic, salt, and pepper. Cook until garlic is just cooked through, about 2-4 minutes.
3. Add spinach. Stir until wilted. Remove from heat.
4. Add quinoa back in, as well as cheeses. Stir together until blended and cheese is melted.
Serving Size: Makes 6 1/2 c servings
