Black bean and tomato dip or spread

Introduction

I was looking for something different to put on my sandwich, and this is what I came up with! Yum! I was looking for something different to put on my sandwich, and this is what I came up with! Yum!
Number of Servings: 2

Ingredients

    1/2 cup black beans, drained and rinsed
    1/2 cup tomato, diced/chopped
    1 lemon wedge

    Optional:
    Dash of Red Hot
    Dash of garlic powder
    Freshly gound black pepper

Tips

I imagine that you could blend or puree this mixture to your liking, and that you could explore additional mix-ins; this is just what I had on hand, and I'm pretty pleased with how it came out. Low-calorie, hearty, and nutritious. :-)


Directions

After black beans are drained/rinsed, place in bowl. Mash with a fork (will be dry).

Squeeze juice from lemon wedge into beans; mash to combine (will be a little less dry).

Add tomatoes to mixture, and mash or stir; season to taste. Enjoy!

Serving Size: Makes 2, 1/4-cup servings.
