Cajun scallop spinach salad

Ingredients

    Olive Oil, 1 1tsp
    *Cajun Seasoning, 1 tsp
    Brummel & Brown, Original Spread made with Yogurt, 1 Tbsp
    Garlic, 1 clove
    Scallops, raw, 16 oz
    Frank's Hot Pepper Sauce, 2 tsp
    Spinach, fresh, 4 cup

Directions

Heat oil in skillet over high head. Add cajun seasoning and pepper. Saute 3 min. Add butter and garlic. Saute 30 sec. Add scallops. Cook 1 minute. Add hot sauce. Turn. Cook 3 minutes until done.

Add scallops to fresh spinach to make salad.

Serving Size: Makes 4 salads
