Spicy Lentil Stew

Ingredients

    1 15oz can chickpeas, drained
    1 4oz can green chiles
    1 tsp lime juice
    1 15oz can diced tomatoes, no salt added
    2 tbsp dehydrated onions
    1 cup lentils
    2 cups vegetable broth
    salt and pepper to taste

Directions

Place lentils and broth in a pot. Bring broth to boil, reduce to simmer. Cook for 30 minutes or until tender.

Add all other ingredients and allow to simmer on low for about 10 minutes.

Serve warm, about 4 servings.
