Coconut Rice Pudding

Introduction

I use REAL coconut extract. The artificial stuff is nasty and I highly recommend not using it. I use REAL coconut extract. The artificial stuff is nasty and I highly recommend not using it.
Number of Servings: 4

Ingredients

    1 4 serving box Jello Cook and Serve Vanilla Sugar Free Pudding Mix
    1 1/2 cups non fat milk
    1 teaspoon coconut extract
    15g coconut meat, unsweetened
    1/2 cup minute rice
    1/2 cup water
    Additonal coconut meat to sprinkle on top (optional)

Directions

Prepare pudding using 1 1/2 cups milk according to package directions meanwhile prepare minute rice using 1/2 cup rice and 1/2 cup water. Add extract, coconut meat and prepared minute rice to prepared pudding. Chill for at least 2 hours. Sprinkle with additional coconut meat if desired.
